Paneer Cheese Corn Paratha

Hey guys! New day, new recipe. Paneer Cheese Corn Paratha is something we would eat on weekends since it is a little time consuming but totally worth the effort. This paratha is everything, its spicy a little sweet had has lots for fresh flavors . I would recommend making the exact quantity that I post, it makes 6 parathas and some stuffing left to make more. I usually freeze the rest so I can make them again. 

I like making paneer at home rather than using store-bought, but store-bought also works just fine. I will put up a blog on how I make fresh paneer at home. Its soo easy and fresh.

You can make this paratha with whole wheat flour or with maida I like doing half and half since it gives that perfect balance of healthy and also wanting the dough to be stretchy

Paneer Cheese Corn Paratha

prep 40mins cook 10mins total 50mins

yield 4 servings

Ingredients

Paneer filling

350 gms of Paneer (cottage cheese)

1 serrano pepper finely chopped

⅓ cup coriander leaves 

⅓ cup sweet corn boiled 

½ cup grated mozzarella cheese

¼ tsp garlic powder 

½  tsp black pepper

Salt to taste

Dough

1 cup all purpose flour

1 cup whole wheat flour

 ½ tsp carom seeds

Water (add as required)

2 tbsp oil

pinch of salt

2 tbsp of butter

2 tbsp oil

melt butter and oil and set aside to top the paratha

Preparation

  1. In a bowl add grated paneer, cheese, chilis , coriander leaves , corn, salt, garlic powder, and black pepper and set aside

  2. In another bowl add whole wheat flour and all-purpose flour with carom seeds and salt. Gradually add water to form a soft dough and add some oil to it and let it rest for about 20 minutes.

  3. Once the dough is rested make balls ( it should be about 75gms per ball)

  4. Dust some flour and then start rolling the paratha, using a rolling board and rolling pin.

  5. Add the paneer filling and seal it 

  6. Dust some more flour on the filled dough ball and start rolling also applying a little pressure on the ends to make the paratha round

  7. You can use a nonstick pan. Once the pan heats up put the paratha on the pan and let it cook on each side for about 3 mins or till you get some brown spots. 

  8. In a separate bowl take butter and oil and let it melt. Apply this on the paratha and flip and repeat it on the other side too. (The whole process should take about 6-7 minutes)

  9. Once the paratha cooks you can top it with some butter and enjoy with come pickle or spiced yogurt
