Quick and Easy  Schezwan  Fried Rice

Schezwan fried rice is a popular fried rice variety from the Indio Chinese cuisine. Unlike regular fried rice, schezwan fried rice is hot and spicy with bursting flavors of ginger and garlic with crunchy vegetables. It is made by stir-frying vegetables and tossing with sauces and rice. It is a quick recipe and can be done in a few minutes. I prefer using rice that is made a day prior so it gives some structure to the recipe. You can use fresh rice too but a day prior rice is recommended.

Quick and Easy Schezwan  Fried Rice


prep 15 mins cook 15 mins total 30mins

yield 2 servings

Ingredients

3 Cups cooked rice

2 Tbsp chopped garlic

1 Tbsp green chili

3 Tbsp vegetable oil

1 Medium onion chopped

1 Small capsicum chopped

1 Cup shredded cabbage 

1 Tsp Black pepper 

½ Cup spring onion chopped

1 Tbsp soy sauce - Chings Secret

1 Tbsp green chili sauce - Chings Secret

1 Tbsp red chili sauce - Chings Secret

3 Tbsp schezwan sauce- Chings Secret

Salt to taste


Preparation

  1. Heat a wok with oil and let it get really hot. Once the oil is hot add garlic and chilies and saute them till garlic is golden brown

  2. Add onion and saute it for about 3 minutes. Add capsicum and saute for an additional 3 minutes.

  3. Add shredded cabbage and saute for about 2 minutes. Make sure the veggies are still crunchy

  4. Once the veggies are cooked enough add sauces( Red chili, green chili, soy sauce, and Schezwan sauce ) and toss till everything combined. Sprinkle salt and pepper as needed.

  5. Add cooked rice and toss till everything combined. Top with chopped spring onion and give one final toss to combine everything perfectly.
