Bombay Veggie Grilled Cheese Sandwich

Hey guys! I hope you all are enjoying the long weekend! So the recipe I am sharing is really close to my heart. Its the Bombay Veggie Grilled Cheese Sandwich, I remember eating this sandwich every day after my college lectures would end. It was a treat. I moved to the US two years ago and I had a sudden craving to eat these sandwiches, so here I am sharing it with you all and hoping to make your day. 

A little more about this sandwich, this sandwich is very popular in Bombay, India. It is one of the biggest cities in the country. Mumbai is called the city where all your dreams come true and this sandwich is an affordable treat to everyone who comes to Mumbai to struggle and its the most loved street food.  This sandwich can be made is so many different varieties but here’s my take on Bombay Sandwich.

Bombay Veggie Grilled Cheese Sandwich

prep 30 mins cook 20 mins total 50 mins

yield 6 Sandwiches

Ingredients

Green chutney

3 green chilies

15-20 mint leaves

1/2 cup coriander leaves

3 garlic peeled

1/2 tsp cumin

Salt to taste

1/4 cup water

Potato bhaji

3 boiled and peeled potatoes

4 green chilies

4-5 curry leaves

1/2 tsp cumin (jeera)

1/4 tsp mustard

1 tsp ginger garlic paste

1/2 tsp turmeric

1/3 cup coriander leaves

1 tbsp mint chutney

Sandwich

12 slices of bread

1 medium onion

1 medium tomato

1 cucumber

Slices of American cheese

Butter

Preparation

Green chutney

In a mixer add mint, coriander, chilies, garlic, cumin, salt and water and make a fine paste and set aside.


Potato Bhaji

In a pot add oil, chilies, cumin, mustard, curry leaves and ginger garlic paste. Once it gets fragrant add turmeric and boiled potatoes and let it cook for about 5 minutes, add coriander leaves and set aside

Sandwich Assembly

Take slices of bread and add generous amount of butter one one side and green chutney on the other side. Add the potato bhaji , tomatoes, onions, cucumber and cheese with some salt and pepper.

In a nonstick pan add some butter and toast the bread till its golden brown and the cheese starts to melt.

I Love my sandwich cut diagonally and its ready to serve
